KETO BERRY COBBLER
This berry cobbler is beyond easy, literally put together in less than 10 minutes and super delicious! Perfect summer/holiday dessert that is healthy and easy to make. Gluten Free, Grain & Dairy Free. Yummm!
12oz favorite berries (fresh or frozen)
1 tsp xanathan gum
1/2 lemon juice
1/2 cup sweetener (I used Monk Fruit)
Topping / Crust
1 Cup The Muscle Donut Keto Pancake & Waffle Mix
2 Oz Melted butter
1 tsp pure vanilla extract
•Preheat the oven to 375 degrees F.
•Combine berries, lemon juice, and xanthan gum in a bowl using a spoon and make sure everything is coated well. Transfer to a 8-inch oven safe skillet or pie mold.
•In another bowl, add pancake mix and vanilla, whisking until combined and a thick dough forms.
•Spread the dough over the berries and bake for 20-25 minutes, until the top is golden brown and the berries are bubbling.
•Let set for 5 minutes before serving. Enjoy with a scoop of your favorite low carb ice cream.
Pro Tip: feel free to double the topping and make it as a crust and topping.
